Sometimes you need an easy, inexpensive, and delicious dinner. In that case I like to turn to a simple Baked Chicken Drumsticks recipe. I specifically meant to write down what I paid for 1 1/2 pounds (5 drumsticks) but of course I didn’t. I believe it was in the $3-$4 range and with a simple at home breading of herbs and bread crumbs the main course works out to well under $1 per serving.
I also like this dinner because using inexpensive bone in chicken limits the amount of actual meat we are consuming and allows me to fill the maniac’s plates with veggies. One thing we have tried to do over the course of several years is cut back on the amount of meat consumed in meals and shift the difference to fruits and vegetables. Instead of doing something crazy like cutting back on steak entirely we just cook one and divide between ourselves and make up the difference with healthy side dishes. Chicken Drumsticks fit perfectly in line with this and the recipe is incredibly simple to throw together on a busy weeknight.
My recipe for Baked Chicken Drumsticks is an easy 3 step process. Load the breading, herbs, cheese, and oil into a bag. Toss each piece of chicken in the breading and bake it.
Into a large freezer bag I place 1 cup of panko bread crumbs, 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon garden herbs (or your favorite herb blend), 1/2 teaspoon black pepper, 1/4 teaspoon red pepper flakes, 1/4 cup of shredded Parmesan cheese, and 3 tablespoons olive oil.
Those ingredients get shaken together really well to combine.
Then each piece of chicken goes in and gets tossed and pressed into the breading. I try to get as much to stick as possible without having loose bits on the chicken that will burn in the oven.
Onto a silicone lined (or parchment) baking sheet and into a 400 degree oven. 35 minutes is the magic number for me.
They should come out golden and still moist on the inside. I let them rest for 3-4 minutes while I fill the maniac’s plates with veggies and then serve.
An easy dinner that all the kids will eat is a wonderful thing on a weeknight. I do still have to remove Spencer’s drumstick meat from the bone to get him to eat it but that is a small price for me to pay to get him to eat dinner.
- 1 1/2 lbs chicken drumsticks
- 1 cup panko bread crumbs
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon favorite herb blend
- 1/2 teaspoon pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup Parmesan cheese, shredded
- 3 tablespoons olive oil
- Preheat oven to 400 degrees and line a baking sheet with silicone or parchment.
- In a large freezer bag combine bread crumbs, salt, garlic powder, herbs, pepper, red pepper, cheese, and olive oil.
- Shake and mix to combine.
- Place each piece of chicken in bags and toss and press to coat in breading.
- Line breaded chicken on baking sheet and transfer to oven.
- Cook 35 minutes until done.
- Allow to rest 3 minutes and then serve and enjoy!
