Chicken Pickle Pizza night was recipe #3 from my Farmers Market Chicken. This is a really delicious, really quick pizza to make for pizza night because I didn’t have to cook any of the pizza toppings first like with Potato Pizza. I love pickles on pizza. It is only something I recently discovered, in the last year. Last year our summer pizza nights were filled with Hot Dog and Pickle Pizza which Norah really loved. I have a harder time getting Spencer to eat pickles on pizza, he will request a pickle free slice and if he doesn’t get that he will pick them off. Oh well, can’t please everyone!
To make this pizza I start with my lunch time routine of making Pizza Dough. When I get home I get to work assembling ingredients. I really like using BBQ sauce on chicken pizza’s. This pizza will have BBQ Sauce, mozzarella cheese, leftover roast chicken and homemade dill pickles.
So I start by rolling out dough for crust. Letting it rest and then putting it on the pizza peel. After pricking it with fork so it doesn’t bubble up I spread about a quarter cup BBQ Sauce on it. We use Sweet Baby Ray’s. I haven’t experimented with homemade bbq sauce sauce yet, hopefully that will be a 2015 garden project! Next is about 2 cups freshly shredded mozzarella cheese, followed by quarter cup pickle slices or in my case I used dill pickle shavings I had made a month ago. Then it gets topped with one of my leftover 4 oz containers of roasted chicken that I cut up.
The last thing I do before shoving it into the oven is sprinkle with black pepper. Into my elderly 450 degree preheated oven, onto a pizza stone it goes. For me it took 8 minutes to look perfect. After it came out I let it rest for 5 minutes before slicing and serving to my little maniacs.
This was a great dinner to try to sneak a Garden Salad into the kids but alas they saw through my trickery and avoided the salad.
- 1 pizza dough rolled out
- 1/4 cup bbq sauce
- 2 cups mozzarella cheese shredded
- 1/4 cup pickle slices
- 4 oz cooked chicken sliced
- black pepper
- Preheat oven and pizza stone to 450 degrees.
- On rolled out pizza dough spread bbq sauce and top with cheese.
- Spread pickles over cheese and top with chicken.
- Sprinkle pepper over pizza and place in oven on pizza stone.
- Cook 8-10 minutes until crust is golden.
- Remove from oven and let sit 5 minutes before slicing and serving!
