One of my favorite things for breakfast is a buttered Everything Bagel. I can’t make them and I don’t even want to try. They are a special treat for me, one that I rely on Em bringing me home from a local bagel shop. She likes to meet clients and friends there and she knows the fit I would throw if I were to get wind she was there and didn’t procure me any of my favorite bagels.
When I was young I lived in Florida for the better part of a year and worked in a shop that made bagels. They got me hooked on the Everything Bagels. My obsession with them has lead me to never eat another kind of bagel in 14 years and counting. I would prefer no bagel at all to another kind.
When there are Everything Bagels in the house chances are the rest of my family will get short changed for dinner because I will want to make an Everything Bagel Egg Sandwich for myself. This recipe starts with me telling them I am too tired to cook tonight or I forgot to defrost meat for dinner. “Do you guys just want Peanut Butter and Jelly Sandwiches?” That is what I will ask them. They will take the trap I set and I will have sandwiches on their plates before they will even see through my ruse. The joke is probably on me though as they will be excited not to see something with kale on their plates!
n to the bagel sandwich. I slice and toast my bagel until it is just a little brown, not to hard or crispy. In a saute pan with a little melted butter I crack an egg and give it a little mix in the pan to break the yolk. A pinch of kosher salt and black pepper on the egg and I let it cook for a few minutes until I can shape it to fit on the bagel. I am not a big fan of American cheese but I insist on it in two situations, egg sandwiches and cheeseburgers. I flip the egg over to cook on the other side and immediately slap a piece on american cheese on the cooked side and turn the heat off so the egg won’t overcook.
Next I make a spicy mayo to put on the bagel. In a little bowl I put a tablespoon of mayo, 1 teaspoon yellow mustard and a pinch cayenne powder. My pinch is usually about a 1/4 teaspoon and that is pretty spicy so use less if you like. I mix those together and slather on both sides of the bagel.
The egg and cheese goes on the bagel and it is done. I slice it in half and savor every bit of it!
- 1 everything bagel sliced and toasted
- 1 egg
- 1 slice american cheese
- 1 teaspoon mayo
- pinch cayenne powder
- In a buttered saute pan on med heat scramble and cook egg into shape of bagel about 4 minutes
- Top with american cheese to melt and turn off heat.
- Mix mayo, mustard and cayenne in small bowl and spread on both sides of everything bagel.
- Place egg and cheese in bagel and top with other half bagel.
- Slice and enjoy!
