Cheeseburger Pie

Em’s birthday was a few weeks ago and she requested straight up cheeseburgers for dinner.  It had been a really long time since we had just cheeseburgers.  All winter we have been making cheeseburger sandwiches instead.

That got me thinking of cheeseburger pie.  We made it quite a few times last winter but it had fallen out of our rotation during the healthier eating summer months.  Time to bring it back!

I start by making the topping that will get poured over pie.  1 cup baking mix (i.e. Bisquik) 2 eggs, 2 cups milk combined in a mixing bowl.

Then in a saute pan over medium high heat I start browning ground beef.  I dice a large pickle, a large onion, and a large green pepper and toss them in with the ground beef.

Once the ground beef is browned and the veggies are sweated they are poured into a 9 inch pie pan.  If there is a lot of grease from meat I drain most of it off before pouring in.

On top of the meat and veggies goes 1 cup shredded cheddar cheese.

Next the topping batter is poured into pie pan and I put the pan on a baking sheet to prevent bubbling over in the oven.

I cook this for 30-35 minutes in a 400 degreee oven.  I usually start checking at 25 minutes, I find that it should look a little overcooked before taking out or the middle is still not done.

This goes great with some potato wedges on the side and some ketchup to dip them both in.
