I have gotten behind on posting mostly due to a stubborn antique Daffodil Cake recipe I was trying to get done. Long story short it took me 5 tries to get the thing right, but it also gave me a great idea to do a bloopers post sometime soon because everyone knows I screw up a lot of stuff. The Daffodil Cake should be up later this week but for now I give you our homemade Trail Mix.
Trail Mix is a great healthy little snack we make in batches from bulk seeds and nuts and store away to put in Norah’s school lunch or for an afternoon snack. This recipe will make 14 – 1/4 cup servings (enough for the 2 kids to each have 1 a day for a week) and fill a quart mason jar for Em and I to snack on.
My goal when making this is to limit the salt while still making it taste great. To do that I use 2 seeds that are roasted and salted to 4 that are raw and unsalted. Into a large bowl goes 1 cup each of roasted salted pumpkin seeds (these are my favorite!), raw unsalted sunflower seeds, sliced almonds, pecan pieces, and cashews. Then I add 1/2 cup roasted salted soy nuts.
On top of this goes the dried fruit. I used 3/4 cup each of dried sweetened cranberries (Norah’s favorite), golden raisins, and yogurt covered raisins (Spencer’s favorite).
Once that is mixed together you have your Trail Mix!
I scoop out 1/4 cup servings into containers to stick in the cupboard for snack time for the kids while, downing whole handfuls on my own. I am pretty good at giving advice and much worse at taking my own!
This is a great homemade snack to make for the family, once you get over the sticker shock of buying all those seeds, nuts, and fruit. If you buy in bulk and make a bunch of batches the price make it worthwhile. Also you should make a rule that your youngest kid can’t just pick out the yogurt raisins because that can become an issue!
- 1 cup roasted salted pumpkin seeds
- 1 cup raw unsalted sunflower seeds
- 1 cup sliced almonds
- 1 cup pecan pieces
- 1 cup cashews
- 1/2 cup roasted salted soy nuts
- 3/4 cup sweetened dried cranberries
- 3/4 cup golden raisins
- 3/4 cup yogurt covered raisins
- Combine pumpkins seeds, sunflower seeds, almonds, pecans, cashews, soy nuts, cranberries, golden raisins, and yogurt raisins in a large bowl and mix.
- Scoop out 1/4 cup serving sizes for snacks!
