Slow Cooker Applesauce Pork Tenderloin

I was pretty proud of myself after making this.  I was fishing for compliments all around the table while Em and the maniacs were busy eating it.  I needed a win that night and I got it! Only 2 ingredients and a slow cooker and it turned out great!

Of course I was mostly happy about this dinner because it allowed me a save from the homemade applesauce I made that none of the kids would touch.  A few days before I had just thrown a bunch of cored unpeeled apples into a slow cooker with some water all night not sure what I was going to make with it – maybe apple butter.  The next day I got lazy and thought I would just put it into a quart mason jar in the fridge and use as applesauce for the week since we didn’t have any.  Come to find out a dark colored full of peels with no sugar applesauce was not the kids idea of a good breakfast treat!

The jar just sat in the fridge getting no love for a few days and each time I opened the fridge I saw it and regretted my decisions that lead up to that failed experiment.  Then while at the grocery store with Norah in between telling her to put down various junk food items I saw a pork tenderloin and had an idea.  Slow Cooker Applesauce Pork Tenderloin.

A few mornings later I was ready to save my applesauce.  After making the kids breakfast I tossed the pork tenderloin into a pan with olive oil and salt and peppered it.  I let it brown on both side for a few minutes then dumped it into the slow cooker with the whole quart of applesauce.

I debated adding things like sage, thyme or other herbs but I decided to just let it be and cook the pork in apples and see how it turned out.  I set it to low and put the cover on.  I checked on it during the day and it smelled great.  At dinner time I made some white rice to go with it.  I could tell the applesauce had thickened a bit and I wanted to be able to put it onto something the sauce could mix with.

It came out of the slow cooker 8.5 hours after it went in and it was perfectly moist but still holding together.

From here I sliced it and put the slices on rice and poured sauce over each plate.  Next time I will probably toast some bread to put the applesauce on too.

This was a pretty big hit for me both Norah and Spencer ate it up (although Spencer wouldn’t touch the white rice).  I was extremely happy to save my applesauce from the garbage!

Slow Cooker Applesauce Pork Tenderloin

An easy 2 ingredient slow cooker dinner!
  • 1 1/4 lb pork tenderloin
  • 1 quart applesauce
  • salt and pepper
  1. In a pan with olive oil on med high heat brown the pork with salt and pepper on both sides 3-5 minutes.
  2. Transfer to a slow cooker and mix with applesauce.
  3. Set to low and cook for 8-9 hours until done.
  4. Slice and enjoy with sauce!
